 Crab Brûlée Recipe



Ingredients:


. 200g (7 oz) fresh crab meat (white and brown meat, if available).

. 250ml (1 cup) heavy cream.

. 3 large egg yolks.

. 2 tbsp grated Parmesan cheese.

. 1 tsp Dijon mustard.

. 1 tbsp chopped chives (optional).

. A pinch of cayenne pepper.

. Salt and black pepper, to taste.

. 2 tbsp granulated sugar (for the brûlée topping).

. Crackers or crusty bread, for serving.


Instructions:


 1-Preheat Oven: Set your oven to 150°C (300°F).


 2-Mix the Custard:


. In a mixing bowl, whisk together the egg yolks, heavy cream, Dijon mustard, cayenne pepper, salt, and black pepper until smooth.

. Gently fold in the crab meat and Parmesan cheese. Add chives if desired. 


 3-Prepare the Ramekins:


. Divide the crab mixture evenly into 4 small ramekins.

. Place the ramekins in a deep baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins.


 4-Bake:


. Bake in the preheated oven for about 25–30 minutes, or until the custard is set but still slightly wobbly in the center.

. Remove from the oven and let cool to room temperature.


 5-Chill:


. Refrigerate the ramekins for at least 2 hours, or until completely chilled.


 6-Brûlée Topping:


. Just before serving, sprinkle a thin, even layer of granulated sugar over the top of each custard.

. Use a kitchen torch to caramelize the sugar until golden brown and crisp. If you don’t have a torch, place the ramekins under a preheated broiler for a few minutes, watching closely to avoid burning.


 7-Serve:


. Let the caramelized sugar harden for a minute, then serve with crackers or crusty bread on the side.
