Ingredients:
1 lb (450g) ground beef or ground turkey
1 medium onion, diced
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) kidney beans, rinsed and drained
1 can (15 oz) corn, drained
1 can (14 oz) diced tomatoes with green chilies (Rotel)
1 can (14 oz) diced tomatoes
1 packet (1 oz) taco seasoning
1 packet (1 oz) ranch dressing mix
2 cups (480 ml) beef or chicken broth
Optional toppings: shredded cheese, sour cream, diced avocado, tortilla chips, chopped cilantro, or green onions
Instructions:
1-Cook the Meat: In a large pot or Dutch oven, brown the ground beef or turkey over medium heat. Add the diced onion and cook until softened. Drain excess fat if needed.
2-Combine Ingredients: Add the black beans, kidney beans, corn, diced tomatoes, and tomatoes with green chilies into the pot. Stir to combine.
3-Season the Soup: Sprinkle the taco seasoning and ranch dressing mix over the mixture. Pour in the broth and stir well.
4-Simmer: Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 20-30 minutes to allow the flavors to blend.
5-Serve: Ladle the soup into bowls and add your favorite toppings, such as shredded cheese, sour cream, tortilla chips, or fresh cilantro.
